Here's how you do it:

Start by slicing the raspberry roulade and spread half in the bottom of a freezer-friendly mold.

Place slices of ice cream on top of the roulade pieces and finish with another layer of raspberry roulade to completely cover the ice cream.

Put the mold in the freezer for a few hours and then cut into small ice cream sandwiches - perfect for the summer heat, student parties or just as a sweet surprise.

An easy and festive dessert that is both decorative and easy to serve!
